Wow, you don't waste any time. Sausage making for us occurs during the holidays. Mainly because my dad goes to PA for deer every year and the season is comparitively late - 1st and 2nd week of December.
He almost didn't make it this year. There was a law passed earlier this year that we were not aware of. A non-US citizen now requires a permit to carry a rifle. He applied for one in late October and just received it yesterday - unbelievable. Something like that would have taken 6 months or more up here.
That is some mighty fine deer sausage! I didn't kill a single deer last season, hopefuly will be able to get one this season and get me some of that tasty stuff too!
