As a youngster in southern Oklahoma, I made turtle soup a couple of times with the "soft shelled" turtles; i.e., the ones with the light brown shell and a sharp pointed nose. In later years, I heard that the snapping turtles were just as good, but never ate one.

I have tasted turtle, fried and passed on the opportunity to eat green sea turtle in Baja (an endangered species that is protected now but regularly served in Mexico back then.)
We caught a big (18-20 inches front to back of shell) turtle in a lake in Michigan and my school teacher aunt dissected it and cooked it up with the fish. It was a handful in the bottom of the boat so it was inverted and the big tackle box put on it to hold it down. When she cut its heart out and put it in a glass of water it kept beating for a long time.
