I usually make smoked Easter sausage and with easter around the corner I made some. 125#'s of smoked.

I never heard of "Easter sausage" before, but it does look good. There are so many different "sausages" that I don't know which is which most of the time. We recently bought some smoked "German" sausage and fixed it the same way we usually fix Brats, except of course I had to cut it in shorter pieces first because it was some long links and looked like your Easter sausage. We like it a little better than the Brats, but when I asked the guy behind the meat counter what was different, he said their German sausage is just a simpler recipe with fewer seasonings.

I'm hungry now. Just can't beat good sausage.
Back many years ago we made sausage and smoked it. Real fun part was cleaning the casings.

It's actually Smoked Polish sausage. I just make it for Easter. There isn't any such thing as a brand name of Easter sausage. I also make it for Oktoberfest and Christmas.

I'm sorry I'm not there to help you eat it. Polish sausage sandwiches with mustard on whole wheat along with a bowl of ranch style beans makes a mighty fine meal.

Used to know a Cajun who would make Deer/Armadilo meat sasuage. He claimed the Deer was lean and the Armadilo had a lot of fat. I killed an Armadilo once and it stunk so bad I wouldn't consider eating it with anything! I spent 19 months in Germany in the ARMY. In Germany they had Bratworst stands on the street corners. I was told that most stands made their own Brats and they all seemed just a little different taste and texture, but VERY good!!

I've never eaten deer or armadillo sausage, but I've eaten some barbecued armadillo that was very good a couple of times. The venison I've eaten was steaks and roasts, but I've eaten caribou summer sausage and moose breakfast sausage (it had just a little pork fat added).

Ever wonder what there seems to be a shortage of small wildlife in cajun country? They'll eat 'bout anything.
Armadillos are frequently carriers for leprosy. That fact alone makes me avoid handling them. I prefer not to inspect them too closely and when I do I prefer to do it through gun sights. You can't tell by looking as they don't get the disease just carry and spread the disease agent.
I'd rather eat rat on a stick.
