My wife gave me a new smoker for Christmas this year. It's a propane one from cabelas. Any hints or tips would be great. Reading thru the manual it basically says after its "seasoned" to put meat in it, water and wood chips and turn it on to about 225 degrees and let it cook. Looking in my freezer I still have a couple turkeys, a pork butt and some roasts(don't know the cut).
Thanks, Steve

Buy a marinade injector and some marinades. Also experiment with some different meat rubs.
You're going to have a ball experimenting with different things as you work to perfect your new "family recipe" to be handed down for generations.

I don't know which smoker you got, but I've read where some think gas smokers simply cannot do a proper job; that you must use charcoal, or even better, use wood. I'd say, "Don't you believe it!" Our next door neighbors were given one of these for Christmas 2005 and had never used a smoker before. His first experiment was pulled pork. It was delicious and you could see the depth to which the smoke had penetrated. They also invited us to dinner when her parents were in town visiting and he had smoked pork ribs. They were as good as I've eaten anywhere.
I just have a big Charbroil Big Easy grill, but have been thinking of getting one of these smokers myself.

Yeah, Pat, I noticed it showing out of stock on the website, but I've been in two different Walmarts lately and each of them had one on display. They actually make the same thing in a larger size, also, and I've thought I might want the bigger one, which it seems no one has in stock. Home Depot sells the same brand and a couple of days ago they showed to have this smaller one, but the big one was out of stock. Now they show both to be out of stock.

Thanks for the link. I will be getting some pigs this spring and have been thinking of building a smokehouse big enough to handle a couple of them at a time, at least the hams and bacon.
