    Default Potatoes

    Potatoes have to be one of my all time favorite foods. They are cheap, filiing, and so versatile to cook with. What are some of your favorite potato recipes? I love making mashed potatoes but adding stuff to it like cheese, bacon bits, and chives.

    I love twice baked potatoes the Best! It's when you bake them and then take them out and cut them in half and take out the insides. You then add that yummy stuff into the potato and then bake them again! Delicious! I'm a big potato lover too!

    I like potatoes (Irish heritage) and my wife (German heritage) likes potatoes, yet another thing we agree on. Fried potatoes are so yummy but... I have lost about 60 lbs and it is NOT EASY to keep it off with things like fried potatoes calling sweetly to you. We find that oven "fried" potatoes are close enough to satisfy us and don't pile on the fat calories.

    I cut up the potatoes and put in a large mixing bowl where I add just a little oil and toss the potatoes to get just a hint of oil on them. You can "oven fry" them with no oil and the results are acceptable but NOT close to the results with just a little oil. I lay them out neatly almost but not quite touching on a baking sheet and cook them till done in the oven. Sometimes I use the convection setting and tend to get better results. Regular baking cooks the bottoms in contact with the baking sheet more quickly. Convection works a bit better. I suppose you could toss in a little broiling action to help even the score. Anyway, you get acceptable "French fries" with almost no oil. I like to add ground New Mexico chili peppers and a dash of salt substitute over mine before cooking. The New Mexico chilies are not very hot at all, add a nice flavor, and really make the fries look good.

    Oh my, potatoes! I have an ongoing love affair with them! Unfortunately my blood sugar and my waist line have suffered a great deal because of french fries, hash browns, mashed potatoes, baked potates - need I go on? I'm on a 'no potatoe' diet for now - maybe forever

    Okay now I am hungry! My family and I love potatoes as well, there are so many different ways you can use them or fix them. Our favorite is mashed and I add stuff to mine as well. I put sour cream, chives, and cheese in mine.

    If it has potatoes in it or around it more than likely I will eat it. I love potatoes and it never really matters what type either. If they are potatoes they are in my belly.

    We really like potato soup. We peel and cut up the potatoes, cover with water, and boil til they fall apart. Add a cube of butter, mix well and enjoy

    We are also a big fan of potato soup. One of my kids is a huge potato fan. I also like to make omelets and cut up pieces of potatoes that I can put in to them.

    One of my favorite potato recipes is stuffed potatoes. You make regular mashed potatoes, but a little on the dry side. Add 2 or 3 raw eggs and mix them up. Add enough flour to make the dough workable. Put a large spoonful on a lightly floured surface and open it up in half. Put a spoonful of hamburger and onion, previously cooked together. Fold over the potato mixture and seal. Deep fat fry them. You can put cheese in the center instead of the hamburger mixture if you want. They are delicious! This is a great way to use left over mashed potatoes, too.
